Ingredients
  • 1 Jack Rabbit,cut up in serving pieces
  • Salt and Pepper
  • Butter
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Cinnamon
  • 2 teaspoons Fresh Horse-Radish
  • 1/2 Cup Water
  • Flour and Water

Directions
  1. Salt and pepper the Jack Rabbit pieces.
  2. Melt a significant amount of butter in a pan.
  3. Brown on all sides.
  4. Remove the rabbit meat from the pan and place in a baking pan.
  5. In the pan that the rabbit was browned,add the nutmeg,cinnamon,horse-radish,stir.
  6. Pour over the Jack Rabbit ,add 1/2 cup water,cover,and bake at 350 degree oven for 1 hour(or)until good and tender.
  7. Take one tablespoon flour and mix with 3 tablespoons of cold water and mix until there are no lumps in it.
  8. Remove the rabbit pieces from the baking pan.
  9. Add the flour mixture to the liquid left in the pan,stir well.
  10. Boil gently for a few minutes until the mixture thickens.
  11. ~Serve the rabbit pieces with gravy and potatoes.~
  12. ~Jack Rabbits can be a pest to Ranchers,and farmers.A nocturnal creature,using it's hearing and speed to evade predators...foxes,bobcats,to name two.Their tails act as an alert showing it's white color when running.
  13. Jack Rabbits are the most destructive because of their size,they can cause enormous damage, inhabiting urban and suburban developments.Once eating habits are established they are hard to change.
  14. They will move from plant to plant,nibbling just a little bite before moving on to the next one.You can always tell if a Jack Rabbit has invaded your area,just look for the paired tooth marks on plants. ~
  15. ~So...When I'm asked...This is the 'only way' I prefer these hare..y varmints~

We have a lot of trouble with the imported pest Jack Rabbits or hares as we call them .Ours are the European variety released as sport animals about 150 years ago .I plant a lot of tubestock trees to revegetate our farm and the nasty critters nip off the trees down near the base and kill the trees ,wasting great expense and effort by us .My mum used the English method of jugging the hares in winter or fall ,that is hanging them uncleaned or gutted till they are gamey in smell ,then cooking them .I just leave them in the trunk of the car for 2 days after shooting them , then into the slow cooker with a bottle of red wine and some flavourings .Now spring is here ,I'll try out your recipe when the b&%$# are about .
