Broccoli Casserole Recipe
My husband and Dad go gaga over this dish so it's a regular side at many get togethers. It's also been a very successful way to get children to eat a little green broccoli.

Ingredients
  • 1 large package frozen chopped broccoli (I think it's a 1 pound bag, but it really doesn't matter if it's over a pound)
  • 1 stick butter
  • 1 medium onion, chopped
  • 1 cup instant rice, cooked
  • 1 8 oz jar cheez whiz
  • 1 can cream of mushroom soup concentrate (like Campbell's)

Directions
  1. Preheat oven to 350.
  2. Cook rice and set aside.
  3. Saute onions in butter until translucent.
  4. Add frozen broccoli and cook until tender.
  5. Spray or butter a 9 X 12 casserole pan.
  6. Add cheese and soup concentrate to pan and stir together.
  7. Add broccoli onion combo and rice and stir until combined.
  8. Bake for 20-30 minutes until bubbly.
  9. Let sit 10 minutes before serving.
  10. This dish is even excellent as a left over -reheat in microwave.

My boys always loved this.....


One of my favorites. To make this a main dish casserole I add some cooked, diced chicken. Yummmm!
