How to make it

  • Muddle mint and wine with simple syrup in a glass
  • Pack with ice, add the rum
  • Add slices of 1 strawberry
  • Shake 10 seconds
  • Pour into a highball glass
  • Top with wine
  • garnish with another sliced berry and stalk of rhubarb
  • Syrup:
  • Bring all to a boil in saucepot
  • Simmer
  • reduce by third and strain
  • Keep s in the refrig for a week covered
