Ingredients
  • 2 dozen Oysters shucked
  • 1 cup Shortening or Oil
  • 2 cups Flour
  • 4 tsp Pepper
  • 2 tsp Creole seasoning
  • 1 tsp Garlic powder
  • 2 Tbsp Paprika
  • 2 tsp ground dried Thyme
  • 2-4 tsp crushed Red Pepper ( your choice)
  • Cole slaw for topping:
  • 1 head green cabbage, shredded
  • 1 red onion, thinly sliced
  • 2 green onions (white and green parts), chopped
  • 1 fresh red chile, chopped (seeded if you want less heat)
  • 1 1/2 cups mayonnaise
  • 1/4 cup Dijon mustard
  • 1 tablespoon cider vinegar
  • 1 lemon, juiced
  • Pinch sugar
  • 1/2 teaspoon celery seed
  • Several dashes hot sauce
  • salt and freshly ground black pepper
  • 3-4 French Bread Hoggie rolls
  • Mayo or tarter sauce

Directions
  1. In a large bowl mix all the slaw ingredients and set into fridge.
  2. In plastic bag, shake dry ingredients thoroughly and then add oysters to mix. Shake well until oysters are covered. Place oysters into preheated shortening at about 350 deg.. Brown each side of oysters, then place oysters on paper towel to drain grease. Let cool
  3. While oysters are cooling lightly toast rolls in oven
  4. Spread a light to generous coating of Mayo or tarter sauce on bottom roll
  5. Layer 6-8 oysters on roll, top with slaw.

Whenever we went to N'orleans we would head for the oyster po' boys. It didn't matter if it was only time for breakfast! We are obsessive about them in this family. absolutely saved, thanks for this post.
