Favorite Brushetta Recipe
This is a quick and easy appetizer-the longer the mixture stays in the fridge chilling the more potent the flavor-plus doing this is a big time saver!

Ingredients
  • 3-4 large ripe tomatoes, cut up finely
  • 1 clove garlic,chopped finely (more garlic if you like!)
  • 1/2 large white onion, finely chopped
  • 1/2 large red onion, finely chopped
  • 2-3 stalks green onions, finely chopped
  • 1 cup olive oil plus little extra to drizzle
  • fresh parsley,chopped finely
  • fresh basil, chopped finely
  • fresh oregano,chopped finely
  • You may use dried spices also-recommend Italian Seasoning
  • Dash of salt & pepper
  • 1 large loaf fresh French baguette
  • 1 cup shredded mozzarella cheese

Directions
  1. Mix all ingredients together in a large bowl and cover.
  2. Chill at least 1 hour or so- the longer the stronger the flavors!
  3. Preheat oven to 350
  4. Slice baguette into 1" slices and lay slices side by side on a large cookie sheet.
  5. Spoon chilled mixture over each bread slice and drizzle a bit more olive oil over bread slices
  6. Sprinkle mozzarella cheese over all slices and bake for about 20 min. or until bubbly.
  7. Great eaten hot as an appetizer or cold as a quick snack!
