Favorite Brushetta

- 3-4 large ripe tomatoes, cut up finely shopping list
- 1 clove garlic,chopped finely (more garlic if you like!) shopping list
- 1/2 large white onion, finely chopped shopping list
- 1/2 large red onion, finely chopped shopping list
- 2-3 stalks green onions, finely chopped shopping list
- 1 cup olive oil plus little extra to drizzle shopping list
- fresh parsley,chopped finely shopping list
- fresh basil, chopped finely shopping list
- fresh oregano,chopped finely shopping list
- You may use dried spices also-recommend italian seasoning shopping list
- Dash of salt & pepper shopping list
- 1 large loaf fresh french baguette shopping list
- 1 cup shredded mozzarella cheese shopping list
How to make it
- Mix all ingredients together in a large bowl and cover.
- Chill at least 1 hour or so- the longer the stronger the flavors!
- Preheat oven to 350
- Slice baguette into 1" slices and lay slices side by side on a large cookie sheet.
- Spoon chilled mixture over each bread slice and drizzle a bit more olive oil over bread slices
- Sprinkle mozzarella cheese over all slices and bake for about 20 min. or until bubbly.
- Great eaten hot as an appetizer or cold as a quick snack!
