Margarita Shrimp Skewers

- 1/2 cup tequila shopping list
- 1/4 cup fresh lime juice shopping list
- 1-1/2 ounces orange juice concentrate thawed shopping list
- 2 teaspoons vegetable oil shopping list
- 1-1/2 pounds medium shrimp peeled and deveined shopping list
- 3 fresh jalapenos shopping list
- 1 large red bell pepper cut into 1/2" squares shopping list
- 1/2 teaspoon coarse salt shopping list
- 1 tablespoon minced fresh cilantro shopping list
- lime wedges shopping list
How to make it
- Combine tequila, lime juice, orange juice and vegetable oil and mix until blended.
- Place shrimp in shallow dish then pour marinade over and refrigerate 30 minutes.
- Fire up grill bringing temperature to high.
- Cut each jalapeno into 8 small pieces.
- While grill heats drain shrimp and discard marinade.
- Skewer shrimp with jalapenos and bell pepper pieces avoiding crowding.
- Slide one end of the first shrimp on a skewer then add a piece of jalapeno and bell pepper.
- Slide the other end of the shrimp over the skewer then repeat with two shrimp per skewer.
- Assemble remaining kebabs and sprinkle them lightly with salt.
- Grill kebabs uncovered over high heat for 2 minutes per side.
- When done sprinkle kebabs lightly with cilantro and serve them hot with lime wedges.
