How to make it

  • Cook and stir sausage until brown,drain.
  • Stir in remaining ingredients for meat sauce.
  • Heat to boiling,reduce heat.
  • Simmer uncovered,stirring occasionally..1 hour
  • Clean spinach,washing several times,drain.
  • Cover and cook with just the water that clings to leaves until tender..3 to 10 minutes.
  • Rinse spinach with cold water,drain.
  • Place spinach,eggs,1 tablespoon olive oil and 1 teaspoon salt in blender.Cover and blend until pureed..about 20 seconds.
  • Make a well in center of flour,add spinach mixture,stir with fork until mixed.
  • Sprinkle with a few drops water if dry,mix in small amount of flour if sticky.
  • Gather dough into a ball.Knead on lightly floured cloth covered board uintil smooth and elastic..about 5 minutes.
  • Let stand 10 minutes.
  • Divide dough into halves.Roll one half into rectangle 13x12",cut rectangle into 6 strips, 13x2" each.Repeat with remaining dough.
  • Spread strips on rack,let stand about 30 minutes.
  • Heat water to rapid boiling,stir in 1 tablespoon salt,1 tablespoon olive oil,and the spinach noodles.
  • Cook uncovered over medium heat until nearly tender..about 15 to 20 minutes,drain,rinse with cold water.
  • Place in single layer between sheets of waxed paper.
  • For the creamy sauce,heat butter over low heat until melted.
  • Blend in flour,salt,and nutmeg.Cook over low heat,stirring constantly,until smooth and bubbly.
  • Remove form heat ,stir in milk.
  • Heat to boiling,stirring constantly.
  • Boil and stir 1 minute,cover and keep warm(should be the consistency of heavy cream)
  • After you have prepare the meat sauce,green noodles,cheese filling and creamy sauce.Reserve 1/2 of the cheese filling.
  • Spread 1 cup of the meat sauce in a ungreased baking dish 13-1/2x9x2".
  • Layer 3 green noodles,1/2 of the creamy sauce,1/2 the remaining cheese filling.Meat sauce...repeat.
  • Sprinkle with reserved cheese filling.
  • Cook uncovered in a 350 degree oven untl hot and bubbly,about 35 minutes.
  • Let stand about 10 minutes before cutting.
  • Serve with a nice salad,crusty bread,a good wine.
