  • Meat Sauce:
  • 8 oz. Bulk Italian Sausage,crumbled
  • 1 (4 oz)package Smoked Sliced Chicken ,finely chopped
  • 1 Large Onion,finely chopped
  • 1 Stalk Celery,finely chopped
  • 1 Carrot,finely shredded
  • 2 Cloves Garlic,finely chopped
  • 1-3/4 Cups Water
  • 3/4 Cup Red Wine
  • 1/3 Cup Tomato Paste
  • 1/2 teaspoon Italian Herb Seasoning
  • 1/8 teaspoon Pepper
  • Dash of Nutmeg
  • Green Noodles:
  • 8 oz, Spinach
  • 2 Eggs
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Salt
  • 2 Cups Flour
  • 4-1/2 Quarts Water
  • 1 Tablespoon Salt
  • 1 Tablespoon Olive Oil
  • Cheese Filling:
  • Toss 2 Cups Shredded Mozzarella Cheese
  • 1-1/2 Cups Grated Parmesan Cheese
  • 1/4 Cup Snipped Parsley
  • Creamy Sauce:
  • 1/3 Cup Butter
  • 1/3 Cup Flour
  • 1 teaspoon Salt
  • Dash of Nutmeg
  • 3 Cups Milk

Directions
  1. Cook and stir sausage until brown,drain.
  2. Stir in remaining ingredients for meat sauce.
  3. Heat to boiling,reduce heat.
  4. Simmer uncovered,stirring occasionally..1 hour
  5. Clean spinach,washing several times,drain.
  6. Cover and cook with just the water that clings to leaves until tender..3 to 10 minutes.
  7. Rinse spinach with cold water,drain.
  8. Place spinach,eggs,1 tablespoon olive oil and 1 teaspoon salt in blender.Cover and blend until pureed..about 20 seconds.
  9. Make a well in center of flour,add spinach mixture,stir with fork until mixed.
  10. Sprinkle with a few drops water if dry,mix in small amount of flour if sticky.
  11. Gather dough into a ball.Knead on lightly floured cloth covered board uintil smooth and elastic..about 5 minutes.
  12. Let stand 10 minutes.
  13. Divide dough into halves.Roll one half into rectangle 13x12",cut rectangle into 6 strips, 13x2" each.Repeat with remaining dough.
  14. Spread strips on rack,let stand about 30 minutes.
  15. Heat water to rapid boiling,stir in 1 tablespoon salt,1 tablespoon olive oil,and the spinach noodles.
  16. Cook uncovered over medium heat until nearly tender..about 15 to 20 minutes,drain,rinse with cold water.
  17. Place in single layer between sheets of waxed paper.
  18. For the creamy sauce,heat butter over low heat until melted.
  19. Blend in flour,salt,and nutmeg.Cook over low heat,stirring constantly,until smooth and bubbly.
  20. Remove form heat ,stir in milk.
  21. Heat to boiling,stirring constantly.
  22. Boil and stir 1 minute,cover and keep warm(should be the consistency of heavy cream)
  23. After you have prepare the meat sauce,green noodles,cheese filling and creamy sauce.Reserve 1/2 of the cheese filling.
  24. Spread 1 cup of the meat sauce in a ungreased baking dish 13-1/2x9x2".
  25. Layer 3 green noodles,1/2 of the creamy sauce,1/2 the remaining cheese filling.Meat sauce...repeat.
  26. Sprinkle with reserved cheese filling.
  27. Cook uncovered in a 350 degree oven untl hot and bubbly,about 35 minutes.
  28. Let stand about 10 minutes before cutting.
  29. ~Serve with a nice salad,crusty bread,a good wine~
