How to make it

  • Rub cavity of fish with the salt and pepper.
  • Cook and stir the onion and mushrooms in 2 tablespoons butter ,until onions are tender.
  • Mix onion,mushrooms,bread crumbs,anchovies,milk,and parsley.
  • Spoon into cavity of fish.
  • Close opening with skewers,lace with string.
  • Place fish in a shallow pan.
  • Mix 1/4 cup butter,lemon juice and garlic.
  • Brush fish with the mixture.
  • Cook uncovered in a 350 degree oven,brushing occasionally with butter mixture,until fish flakes easily with a fork...about 1 hour.
  • Serve garnished with parsley sprigs,thinly sliced lemon..and a really good White Wine.
