Chili Chicken with Avocado Mango Relish

- 1/4 cup olive oil shopping list
- 2 tablespoon red chili powder shopping list
- 1/2 teaspoon ground cumin shopping list
- 1 teaspoon fresh garlic minced shopping list
- 1/2 teaspoon fresh oregano shopping list
- 4 boneless skinless chicken breasts shopping list
- 1/4 cup olive oil shopping list
- 1 leek white part only chopped shopping list
- 1 clove garlic minced shopping list
- 1 pound fresh spinach shopping list
- Relish: shopping list
- 1 large mango diced shopping list
- 1/2 medium red onion diced shopping list
- 1/2 bunch cilantro chopped shopping list
- 1 avocado diced shopping list
- 1 small red bell pepper seeded and diced shopping list
- juice of 1 lime shopping list
- 1/2 teaspoon salt shopping list
How to make it
- Combine first 5 ingredients in a mixing bowl then put chicken in bowl and toss.
- Marinate chicken refrigerate for 3 hours.
- Combine all relish ingredients and set aside.
- When ready to prepare meal get two sauté pans.
- In one pan heat oil and add leeks and cook until tender then add garlic and cook until brown.
- Add spinach and sauté until almost wilted.
- In the other pan pull chicken from marinade and discard marinade.
- Sauté chicken 4 minutes per side then drain and put on a bed of spinach on each plate.
- Top with relish and serve immediately.
