Bankheads Quiche Lorraine Recipe
An easy version of Quiche Lorraine.

Ingredients
  • 9" frozen deep dish pie shell
  • 2.8 oz package real bacon bits (or 10 slices bacon cooked & crumbled)
  • 1/4 cup chopped onion
  • 8 oz shredded Swiss cheese, divided
  • 6 beaten eggs
  • 1 cup fat free half & half
  • 1/2 tsp salt
  • dash red pepper
  • dash white pepepr
  • 1/8 tsp ground nutmeg

Directions
  1. Thaw pie shell for 15 minutes.
  2. Prick bottom and sides of shell with fork a few times.
  3. Bake directly on oven rack for 10 min. at temp. on the package.
  4. Saute onion (and bacon if using real) until browned and drain well.
  5. Sprinkle evenly in shell.
  6. Top with 1 cup cheese and set aside.
  7. Combine eggs, milk and spices, stirring well.
  8. Pour into shell and top with remaining cheese.
  9. Bake on cookie sheet at 350 degrees for 50 minutes until set.
  10. Let stand 10 minutes before serving.
