TACO LASAGNA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brunson Estate in Midlothian, Texas in 1990.

Ingredients
  • 2 pounds ground beef
  • 2 packages taco seasoning mix
  • 4 cloves pressed garlic
  • 1/2 teaspoon cayenne pepper
  • 1-1/2 cups water
  • 1 tablespoon cornmeal
  • 2 packages flour tortillas
  • 24 ounces chunky salsa
  • 1 cup sliced onions
  • 16 ounces sour cream mixed with 1 tablespoon chili powder
  • 3 cups shredded pepper jack cheese divided
  • 3 cups shredded cheddar cheese divided

Directions
  1. Preheat oven to 375.
  2. In large saucepan cook beef until browned then drain well.
  3. Add taco seasoning, garlic, cayenne and water then simmer uncovered 10 minutes and set aside.
  4. Sprinkle cornmeal in bottom of rectangular baking pan.
  5. Place 6 tortillas in bottom of pan overlapping and extending a little up sides of pan.
  6. Layer in the following order:
  7. 1 cup salsa
  8. 1/2 of the meat mixture
  9. 1/2 of the onions
  10. 1 cup of the sour cream mixture
  11. 2 cups of the combined cheeses
  12. Repeat starting with 6 tortillas, salsa, meat, onions, sour cream mixture and 2 cups of cheese.
  13. Bake 40 minutes then remove and sprinkle with any remaining cheese and bake 10 minutes.
  14. Let stand at least 10 minutes before serving.
