Ingredients
  • 1 boneless chicken breast-sliced in 1/2 through the middle
  • 2 cloves garlic- minced
  • extra virgin olive oil
  • balsamic vinegar
  • salt
  • freshly cracked black pepper

Directions
  1. Rinse chicken and pat dry
  2. use a large bistro bowl to toss the chicken with olive oil until coated
  3. sprinkle with salt and pepper
  4. smear with garlic on both sides
  5. drizzle about 1 tbsp vinegar on each piece of chicken
  6. cook in a hot pan until each side is golden brown

Served w/ barley (cooked in vegetable stock w. garlic and bay leaf), chopped carrot and peas (done in microwave and added)
