Salmon Fajitas

- 6 salmon fillets shopping list
- juice of 1 lime shopping list
- 4 sheets aluminum foil shopping list
- 1 envelope fajita mix shopping list
- 2 tablespoons flour shopping list
- 2 large bell peppers cut in strips shopping list
- 1 medium white onion thickly sliced shopping list
- 15 ounces black beans rinsed and drained shopping list
- 1/2 cup salsa shopping list
How to make it
- Warm tortillas, additional salsa and shredded pepper jack cheese
- Preheat oven to 450.
- Cut salmon fillets crosswise into 1/2" strips then squeeze lime juice over salmon.
- Combine salmon strips, fajita seasoning and flour then set aside.
- Combine peppers, onion, beans and salsa.
- Center 1/4 of pepper mixture on each sheet of aluminum foil then top with salmon strips.
- Bring up foil on sides then double fold top and ends to seal packet leaving room for circulation. Repeat to make four packets then bake 30 minutes on a cookie sheet.
- Serve with tortillas, additional salsa and cheese.
