German Meatballs Recipe
GERMAN MEATBALLS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brunson Estate in Midlothian, Texas in 1990.

Ingredients
  • 1 pound lean ground beef
  • 1/2 pound ground pork
  • 1/2 cup white onion chopped, finely
  • 3/4 cup bread crumbs
  • 1 tablespoon fresh parsley snipped
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 egg- beaten
  • 1/2 cup milk
  • 3 tablespoons vegetable oil
  • 3 cups sauerkraut
  • 1/3 cup water

Directions
  1. In large mixing bowl combine first ten ingredients then shape into 18 balls about 2" each.
  2. Heat oil in a large skillet then brown meatballs evenly on all sides.
  3. Remove meatballs from skillet and drain leftover oil from skillet.
  4. Spoon sauerkraut into skillet and top with meatballs then cover and simmer 15 minutes.
