Ginger Peanut Pasta Salad

- 8 ounces corkscrew pasta shopping list
- 20 fresh pea pods with tips and stems removed shopping list
- 1 small cucumber quartered lengthwise and sliced shopping list
- 2 medium carrots cut into long thin strips shopping list
- 1 medium yellow pepper cut into thin strips shopping list
- 3/4 cup thinly sliced radishes shopping list
- 1/2 cup bias sliced green onions shopping list
- 3 tablespoons snipped fresh cilantro shopping list
- 1/3 cup chopped peanuts shopping list
- Dressing: shopping list
- 1/4 cup salad oil shopping list
- 3 tablespoons rice vinegar shopping list
- 2 tablespoons granulated sugar shopping list
- 2 tablespoons soy sauce shopping list
- 1 teaspoon grated ginger root shopping list
- 1/8 teaspoon hot pepper sauce shopping list
How to make it
- Cook pasta according to package directions then during last 30 seconds add pea pods.
- Rinse with cold water and drain then combine pasta and vegetables.
- Combine dressing ingredients in a jar then cover and shake well.
- Toss salad with dressing and sprinkle with peanuts then serve.
