Louisiana Potato Salad Leftover

    I used some of this leftover potato salad today to make a "hash brown" for breakfast. Mushed up the potatoes a bit more to make patties, sprayed the pan with Pam and fried em up. It worked out well! I don't know if it would work with a mayo based potato salad but meh..
