Pork Kavarma Kebap

    I made this main dish one Monday night after finding out our son was going to Buglaria for 2 years for our church. I wanted to fix and entire Bulgarian meal and this was a hit!

    Ingredients:
    1/2 cup olive oil
    2 lbs pork, cubed
    4 leeks, chopped
    1 Tbsp. tomato paste
    1 tsp. paprika
    1 tsp. black pepper, ground
    salt to taste
    1/2 cup water
    1/3 cup white wine
    1/2 onion, chopped
    1/4 cups Italian parsley, chopped
    Instructions

    Heat the oil in a medium-size sauce pan to medium-high. Add the pork and fry until brown on all sides. Remove with a slotted spoon. Add the leeks and cook until brown. Add tomato paste, paprika, pepper and salt, mix well. Add water and wine and mix well. Add the pork.

    Turn down the heat until low, and simmer uncovered until the sauce reduces down. Sprinkle chopped onion and parsley and serve.
