Turkey and Chicken filet with Capers

    I use chicken or Turkey fillets and pound and flour them
    I then use a
    little olive oil and butter in the pan
    and brown them on each side
    I then take them out and add flour to create a roux and cook this and then add
    some chicken broth to create a gravy
    good spoonful of capers,
    juice from 1/2 lemon
    salt and ground pepper
    season it to taste and add more capers,etc to your own taste
    add the chicken back in and serve
