Recipe request: Homemade dough for Spinach Pie

    Some years ago in a tiny kitchen in Budapest, I watched a Macedonian friend perform an amazing feat, throwing flour and a few other simple ingredients onto a bare wooden table top, moving her hands about for some minutes, and ending up with something like what we Americans call phyllo/fillo dough, and buy in the frozen section of the supermarket. Doing an initial web search, I see a number of recipes, but I'd be more trusting of the directions and advice of someone here who learned this skill from their family. I don't think my friend Olivja used vinegar, and I *thought* hers involved butter; but maybe I'm mistaken and it was indeed oil that she used in her preparation. So, anyone here from the Balkans? Want to weigh in? We would all benefit greatly. . .
