Mexican Stew

    If anyone subscribes to Cooking Light magazine I need help.. I believe it was an issue that came out toward the end of last year. It was on soups and stews. There was a recipe for a mexican stew. It had pork, hominy, tomatillos. It's similar to posole, which they actually mention in the recipe. I made it once and it was great, but I lost the magazine and cant seem to find the recipe online anywhere. I've tried to remember what was in it so I can make it again but I know I'm forgetting some things. If anyone has this issue of Cooking Light or this recipe I would really appreciate it!

    Is that the name of the recipe? The exact name would be a great help. I have lots of Cooking Light cookbooks. None for the last couple of years, but Cooking Light does have a penchant for repeating recipes as a filler for their annual books. Let's see what I can find.

    I really think it was just called 'Mexican Pork Stew' but I've searched and searched and come up with nothing so I'm beginning to doubt my memory. Anything you can find would be great. I do remember that the main ingredients were pork, hominy, onion and tomatillos.. I've found several recipes with mushrooms and it didn't have mushrooms.

    Before sharing with you any recipes from Cooking Light I had to send off a letter requesting permission to reproduce their recipes. Waiting for a reply. Don't want the food police to come take me away.

    I didn't think they had control over reproduction rights, especially since I bought the recipes from them in cookbook form. But just to be safe I shot them a request letter.
