What is a Slurry ?

    A slurry-is a combination of starch (usually cornstarch, flour, potato starch or arrowroot) and cold water which is mixed together and used to thicken a soup or sauce. If the starch is solely added directly to a hot liquid, the starch granules cannot disperse easily and clumps form.
    I have used a slurry for making Chili for 40 years. You want to be sure that you temper the slurry or turn the heat down on your Chili to let it stop boiling, if you don't do this you will have Chili and Dumplings It will make lumps every time !!!. Always use a whisk, I have used a hand mixer, a mixing tool called a stick or a similar method to stir while you slowly pour in the slurry to the hot mixture. This mixture is sometimes referred to as a " whitewash". I have also made gravy using this method. I used it when making a bunch of gravy, where making a roux was not practical.
