    Seed and cut meat out of shell in whatever shape you desire.
    Make a 30% sugar solution: 1 3/4c sugar to 4c water. Stir until clear.
    Add cantaloupe flesh to freezer baggie. Add sugar solution until pieces are covered.
    Place wadded up parchment paper or waxed paper in top of baggie to keep the flesh pieces submerged in the sugar solution and freeze upright. Leave enough head space in the baggie for freeze expansion.
    Remove the paper and remove the air from the top of the baggie to prevent freezer burn and seal. Keep frozen until ready for use.
