Moussaka - Bechamel Sauce Substitute possible?

    I'm trying this recipe for the first time and am afraid I can't make the Bechamel Sauce correctly. I can't find it in the store either. Can I substitute Marscapone Cheese, or something already made? Please help. I'm making it for a girls' Greek Night. Thanks.

    Start with 1 Tbsp of butter in a saucepan on med-high, add 1 Tbsp flour and whisk together. Once combined, add 1 cup COLD milk (skim, whole - doesn't matter). Whisk to incorporate and let it come to a simmer on med-high. As you stir, it'll thicken. That's it!
    It's super easy, I promise. If you need more sauce, simply double the quantities.
    And btw, if you use chicken stock instead of milk, it's referred to as velouté (means silky in French). In your case, you want to stick with milk or cream for Moussaka, right?
