Italian Rum Cake

    I am in search of an authentic recipe for Italian rum cake. There is a layer of vanilla cream and a layer of chocolate ganache that goes between the layers and the cake itself is rum-soaked. I am looking for this to make for a 95th birthday this summer. I would surely appreciate any help you may provide. Thank you all in advance.

    Sorry I don't have a recipe for this. But I know the cake you are talking about my husband's family has it for all occations. It may help to know the name. They call it a Cassada cake (although that is probably not how it is spelled). Good luck
