Asian Noodle soup with spinach and corn

    Asian Noodle Soup With Spinach And Corn by Coffeebean53

    I searched for Asian dishes with spinach as I had some fresh spinach that needed to be used up the other day. This was so good yet so simple! It's not something I would have ever thought to put together and it was surprisingly delicious! It was super quick and easy and perfect for a busy weeknight dinner.
    I used ramen noodles for the Chinese wheat noodle called for. And topped it with vegan margarine and black pepper instead of butter and red pepper flakes.
    It was super filling and belly warming, a great bowl of comfort food. I love all the flavors in this and wouldn't change a thing. I found it filling for the four of us, but I could see adding some leftover pork, chicken or a hard boiled egg if you want the extra protein or are feeding 6 people.
    I will definitely make this again!

    I`m down for soup any day of the week Shona and this recipe looks lovely. I`m not a fan of Chinese wheat noodles and would far prefer ramen noodles anyway. YUM!

    For the picture, I didn't load it with the broth so you could see the noodles, corn and spinach. But once I was done with the photo each bowl was topped right to the rim with broth. So there was alot more broth than what I showed. I forgot to mention that!
