Avocado- Mayo Egg Sandwich

    This sandwich makes for a very nice light lunch. I used all but the turkey bacon and tomatoe, I have none in the house. I rarely eat bread but I was in the mood for a sandwich and I had a half avocado that needed using. I did not scale it back as the leftover mix will keep well in the fridge for a day or two. I think the 2tbsp. of lemon juice is to much for me so next time I will add a bit at a time. Worth making again.
