Avocado-Mayo Egg Salad Sandwich

A healthier and grown-up twist on the traditional mayo-laden egg salad sandwich. This will make 4 regular sandwiches or 2 double-stuffed sandwiches.
Ingredients
- avocado Mayo shopping list
- 1 avocado shopping list
- 2 tbsp lemon juice shopping list
- 1 tsp Dijon mustard shopping list
- 1 tbsp extra virgin olive oil shopping list
- 1-2 tbsp water (start with one tbsp and add more to reach desired consistency) shopping list
- Dash Tabasco (optional) shopping list
- ----------------------------------- shopping list
- egg Salad Sandwich shopping list
- 5 hard boiled eggs, chopped shopping list
- avocado Mayo shopping list
- Chopped green or red onion shopping list
- Chopped celery shopping list
- Sliced black olives shopping list
- salt and pepper, to taste shopping list
- 2-4 slices cooked turkey bacon shopping list
- Sliced tomato shopping list
- 2-4 leafs of romaine lettuce shopping list
- 4-8 slices of your favourite multi-grain bread shopping list
How to make it
- Combine all the ingredients for the Avocado Mayo in a food processor and blend until smooth – adding additional water until it reaches a mayo-like consistency
- In a bowl, combine chopped egg, onion, celery, black olives, salt and pepper and Avocado Mayo (use an equivalent amount to what you’d use of regular mayo – this will depend on personal taste).
- Divide egg mixture onto slices of bread. Top with a slice of turkey bacon, sliced tomato and romaine lettuce.
