Avocado Chicken Salad Sandwich

  So, I had some leftover baked chicken thighs and thought I would give this a try. It was delicious! I love how you use mainly avocado as the binder instead of mayo. I used it as an open face sandwich. I thought about the optional garnish but didn't go for it, it was good as is :)
