Avocado Chicken Salad Sandwich Recipe
This twist on a chicken salad sandwich is a new favorite for Pam and I. Most of the mayo is replaced with avocado for smooth, flavorful roll-up, sandwich, or arepa.

Ingredients
  • 1 ripe avocado (Haas)
  • 2 T light mayonnaise
  • 2 chicken breasts (8 oz total)
  • 2 green onion - white and green parts, sliced 1/4" on the bias
  • 1 jalapeno, seeded and veins removed, finely diced (use a canned chipotle for more heat)
  • 1 T fresh cilantro, lightly chopped
  • 1/2 teas oregano
  • 1/4 teas cumin
  • 1/4 teas garlic powder
  • 1 teas lime juice
  • 1/2 to 1 teas Kosher salt (to taste)
  • 4 - your choice of : flour tortillas (roll-ups), croissants, small buns, or arepas (my favorite). Medium tomatoes hollowed out work too.
  • Garnish - Lettuce, sliced tomato (we usually don't add garnish)

Directions
  1. Grill, roast, or poach the chicken breasts
  2. Slice into thin strips across the width or shred
  3. Cut the avocado in half
  4. Remove the pit and scoop into a bowl
  5. Add the lime juice, salt, and mayonnaise.
  6. Mash to desired consistency
  7. Add the spices, jalapeno, green onion, and cilantro
  8. Stir to mix well
  9. Mix in the chicken.
  10. Serve in your favorite wrapper, bread product or arepa (Venezuelan). Garnish too your tastes. It works well in a tomato too.
