Bacon Zucchini Red Pepper Omelet

    Bacon Zucchini Red Pepper Omelet by Chefmeow

    I was just cleaning out my computer and deleting pictures when I came across photos of this omelet! Luckily I looked through the folder before deleting it all! I don't know how I forgot it because it was absolutely delicious! I made this on the weekend for dinner with some frozen hash-browns, a perfect meal for anytime of day.
    I only had half of a large zucchini left, so I decided to grate it which gave it more volume and easier to disperse throughout the omelet. I didn't have the parsley so I used a little sprinkle of dried oregano and basil, and went easy on the cayenne! (it's calls for 1/2 a tsp, I just did a pinch or two).
    I didn't use an oven-proof skillet so I baked it instead of starting on the stove and finishing under the broiler. I sautéed the bacon and veg like instructed, then put it into a 7x11" glass baking dish with the eggs and baked for 20-25 minutes at 350f.
    The red pepper pairs perfectly with the zucchini, bacon and green onions. The whole family loved it! The kids declared it a new favorite and said it's better than the zucchini-tomato frittata I usually make, and they didn't seem to notice that there's no cheese in this recipe! shhhh... Lol, ;)

    Yum, I would totally go for this, and so would my husband! I wish my kiddos liked zucchini, they are way too picky :( Looks so good, glad you found this and posted Shona!
