    This was really good. The chicken was moist and juicy. Probably one of the most moist and juicy chicken breast recipes I've made to date. I wouldn’t call it a poblano sauce. More like a cilantro and garlic cream sauce. If I were to make this I again, I would double or even triple the amount of poblanos and cut the cilantro in half. The recipe is a bit labor intensive and time consuming. Had I made this on any other day, I might have followed the instructions. It was getting down to crunch time and I needed something for dinner in a hurry. I roasted the veggies as directed. Speaking from experience, there are much easier ways to roast and peel a pepper. Cutting them in half makes it a tedious task. I completely skipped cooking the sauce in a separate pot. I can’t have flour so it is pointless for me to cook the sauce to thicken it. What I did was use all heavy cream, added a small egg, and blended everything together. Then poured over the chicken. I don’t really think it needed the egg to thicken it. With all of the cheese on top and the heavy cream, I believe it would have made a thick cream sauce regardless. It was very good served with sour cream on top. Just wished it had more spice from the poblanos and less cilantro. Not a very colorful meal served with the squash. That’s all I could come up with in a pinch.

    MMMmm, looks delicious Diz! I could dive into everything on that plate and be very happy...;) It does sound labour intensive with all the different steps, I'm glad your quicker version worked out ok. Good tip to add more poblano and less cilantro. :)

    Thank you, Cosmicmother! I got the idea for the sauce from another chicken verde recipe that uses heavy cream and an egg. I thought if it worked for that recipe, it would probably work with this one.
