Baked Oatmeal

    Ok, so I had an accident recently involving standing on a chair (I know stupid) and I fell and broke my wrist. SOOO..my left arm is now in a cast. The pain is just starting to let up some so I cooked something today! Takes longer but I'm able to get it done :)

    I stayed away from baked oatmeal for the longest time because I imagined it being dry or crispy and thought, I could just eat granola if I wanted that lol. Finally tried it a couple years ago and loved it, maybe even more so than regular oatmeal.

    This has the perfect ratios of ingredients, baked up nicely. I was low on milks so I had to use 2 cups regular and 2 cups almond. I think all almond milk would have worked great for anyone with a dairy allergy. Flavors were fantastic and so glad I have plenty to eat on for a while :)

    Great pictures. Baked oatmeal is delicious, sorta like a big soft thick oatmeal cookie. Easy to make too and lots of variety. I love oats.

    Oh my gosh, I'm so sorry to hear about your fall and broken wrist! Yikes!!! I sure hope it heals well and quickly!! I say this to everyone who injures themselves so sorry if I'm a broken record, lol, but take a zinc supplement. I like zinc lozenges (which I will take at least 4x a day while healing or sick), but you can also take a 10mg tablet twice a day with food while you heal. It really does help speed up healing, and boost your immune system as a bonus! As someone who hurts themselves often (I'm clumsy) and bruises easily, I swear by it! ;)

    Thanks Shona and Janet! I will get zinc for sure Shona, thanks for letting me know! I got some vitamin C tablets today too. I need all the help I can get lol. They will take the cast off in 4 weeks to x-ray and if it's not healed another goes on and I don't want that :/
