    Bean And Bacon Soup
    Recipe made for IMI2 January 2020 'Bean and Legumes' recipe challenge.

    My review: Outstanding! I cheated and used 3 (15oz) cans of canned Great Northern beans (rinsed). 1/3 c. of dried beans equals approx. 1 c. cooked. 1 (15oz) can of beans is about 1 3/4 c. I was about 3/4 c. short of beans than the recipe indicated but it was close enough. I also doubled the bacon. I let the soup simmer on low for about an hour which yielded a good consistency for me … not too thick but not thin. I opted not to use the vinegar.

    Lovely photo, LindaLMT! I can practically taste it. I don't think I would have used red wine vinegar either. I find it can be overpowering.

    I LOVE bean and bacon soup!! My Sister and I used to eat it all the time as kiddos while at my Dad's house, from the can though lol. Don't think I'd like the canned anymore, but I do like it homemade :) Looks delicious Linda, I'd double the bacon too :-D

    I never liked bean soups as a kid either Linda, but I love them now too! I think I could get my kids to try this, especially if I double the bacon too! Yum! :)
