Beef enchiladas

    Really good recipe. Easy and inexpensive for those tight budget weeks. Sauce was mild which is a good thing for me- but had nice flavor. If inclined this recipe could easily be customized.

    We love enchiladas! I like that you can make it ahead of time and freeze. I think the part for rinsing the meat under water is for fattier ground beef to rinse off the grease? My husband used to do that way back in the day when we bought the "cheap stuff". Didn't seem to mess up anything, but we don't do it anymore though.

    Mommyluvs2cook, I always rinse browned ground beef with cold water to get rid of any grease. Even the ground sirloin I always buy has some and we don't need the extra calories or grease it may add to the dish. Greasy chili, spaghetti, goulash, etc. doesn't sound good for anyone :p
