*Made for the September 2018 Apple Recipe Challenge*

I was pretty skeptical of this because of the lime juice in the dressing. I guess in my mind lime juice is not a too common ingredient in a salad dressing?! So I went forward and made it and my skeptics were true, the lime juice was strange. It wasn't horrible, just not something I would go for again. It worked well with the apples, but as a salad, on lettuce and with the beets, not so much. The only change I made in this was to use a Spring mix salad instead of just romaine. I still ate it all though :) :)

Thank you Linda! My first thought while whipping up the dressing was that lemon would maybe work better, but I stuck with it lol. But yes, I agree, swapping lemon for the lime would probably make a huge difference in this recipe :)

Very nice photo, Mommyluvs2cook! Interesting recipe and yes, the lime sounds odd. At least you can say you tried something different. This is something DH would like. He will order a beet salad when he sees them on a menu. Some of these places come up with the most interesting combinations.
