BEET N APPLE AUTUMN SALAD

Recipe courtesy of THE NEW CHATELAINE COOKBOOK. I haven't tried it, but it looks delicious
Ingredients
- Dressing: shopping list
- 1/4 cup olive oil shopping list
- 2 tbsp lime juice shopping list
- 1 tbsp lime zest shopping list
- 1 tbsp dill shopping list
- 1 tbsp Dijon mustard shopping list
- 1/4 tsp salt shopping list
- 1/8 tsp pepper shopping list
- Salad: shopping list
- 1 small head of romaine lettuce shopping list
- 1 GRANNY SMITH apple shopping list
- 1/2 lb cooked beets or 1-14oz can of beets drained shopping list
How to make it
- Wisk all DRESSING ingredients together.
- Chill.
- Meanwhile tear the lettuce into bitesize pieces and place in a large bowl.
- Toss with half of the dressing.
- Dice the apple and scatter over the lettuce. Peel beets , dice and top lettuce & apples. pour remaining dressing and toss..
