Black Bean Vegetable Soup.

I am a wimp when it comes to spices so I did not add the two tsp. of chili powder I added 1 tsp. and that was just perfect for me. Hubby added more to his.
I also did not have a can of corn, but I don’t think it made much of a difference.
I had some sausage to use up so I added it to the soup, which to me made it a bit heartier.
I also added a extra garlic clove and a bay leaf.
This is a tasty soup but next time I make it I will add more onion and probably a bit of chopped basil, I find the basil and tomatoes make a great pairing.
I used my immersion blender rather then the food processor.
Much safer for me:)))

This reminds me of a vegetarian enchilada dish I used to make, with black beans and corn. I bet I would love this in soup form too!
I'm also with you on the immersion blender, it's one of my favorite small appliances--and clean-up is so much easier than a blender or food processor! :)

a few more. You are right the immersion blender is easier to clean, also a favorite of mine to use.
