I added 2 celery, 2 leeks, 1 small zucchini, celantro & 4 pureed potatoes (to match Amy's Black Bean Vegetable Soup ingredients list) to this recipe. I think the additions improved the soup by adding a bit more flavour and thickness.

This soup is wonderful! I did have to substitute 1 can of black beans with kidney beans because that is what was in my cupboard. I pureed the kidney beans with the tomatoes. I also subbed chicken stock for the same reason. I had made some crusty bread which was so good to dip in the soup. I will be making this one again. Yum! Thanks for sharing your recipe.
