Blue Hawaiian Cocktail

    ***May 2019 Group Recipe Challenge--Tropical Foods***

    This is my most favorite tropical Hawaiian drink. I think it’s because it’s so “blue.” It's a very sweet pineapple and coconut drink. Rum isn’t my favorite. I still add it, but use about half of the recommended amount. I’m sure I could probably leave it out and wouldn’t even notice. The recipe says it's a drink for 2, but it barely filled one glass. There is a history behind this that has something to do with a hotel, Elvis, and maybe a movie. I just don’t remember how it all ties together.

    My Mom is a huge Elvis fan! (almost named my brother Elvis...Lol...thankfully she didn't). She has a ton of Elvis movies on tape (and all his records!) and I remember watching Blue Hawaii several times, probably my favorite one of the bunch! ;)
    Perhaps vodka instead of rum would be ok? Especially if you don't taste the rum. I could go for that cocktail over dessert any day! :D

    Thank you, LindaLMT! Cream of coconut is thick like sweetened condensed milk. You can find it in the grocery store either in the drink mixer section or the Hispanic section. I buy Coco Lopez that comes in a tall blue can. In the drink mixer section I think I've seen it in a white plastic bottle. The disadvantage with the can is that I have an opened canned that needs used. More drink recipes coming......

    Thank you, Cosmicmother! Whew! I wouldn't want to have the name Elvis. I know a hotel in Hawaii created this drink. Perhaps the hotel was featured in the movie. I can't say that I've ever watched any Elvis movies, but enjoy some of his music.

    I had to "google" the Blue Hawaiian Cocktail. It says you can use vodka and it is served on the rocks. That would be better because blending it with the ice washed out the deep ocean blue color. Might give that a try today. :)

    Thanks DIZ. I now know what it is. I wasn't sure if what I have was it. I do have some and bought it in the white plastic bottle, so much easier to use and keep. I bought some to make a PainKiller a few months ago. Love them but don't drink them too often.
    (Pusser’s Rum with 4 parts pineapplejuice, 1 part cream of coconut and 1 part orange juice served over therocks with a generous amount of fresh nutmeg on top. You have a choice of numbers 2, 3 or 4, which designate the amount of Pusser’s Rum! Cheers!

    Looks so pretty DIZ! I have seen the cream of coconut before but never have used it. I could see vodka working in this like Shona suggested. Lol at the painkiller and it's choices of how much rum to use :P
