Bow-Ties with Sausage and Cream

    Bow Ties With Sausage, Tomatoes And Cream by Kellie1981

    This was great! I followed the recipe pretty closely, except I used a whole pound of Bow tie pasta. And there was plenty of sauce to cover the whole pound of pasta!
    My can of Plum tomatoes were packed in puree not tomato juice. So I used the little amount of puree rather than draining it like the recipe said to do. (The puree was also packed with basil leaves so it's too good to throw out!)
    The sauce is very creamy, so I think you could start with a cup of cream and see from there if you need more. I also left out the parsley as I'm not a fan, fresh basil would have been awesome though! :D
    Sweet Italian sausages are my favorite, and I'm glad the recipe calls for it. I don't think the mild or hot would go in this as well? The mild uses a lot of Italian herbs that would stand out too much. The Sweet is named for the Sweet Basil (a certain variety of basil) They have a nice basil flavour with a light fragrance of fennel.They're sooo good! :D
    It's very dark in my house and my dining room light made the pasta look orange, but it's actually a nice blush pink colour!
    A very good recipe that the whole family loved! Especially my kids :)

My weakness is the hot Italian sausage, but since my little one doesn't really do spicy food, I often buy the sweet or mild. Good tip on using less cream :) Looks delicious Shona!!

    Shona that looks absolutely delicious. I think for the heavy cream might have to substitute something else. I could try it with so delicious dairy free coconut beverage. That might work, beautiful picture.

    I was wondering about a lactose-free sub, too, Manella, but my husband doesn't like nut or coconut milk. Maybe Lactaid, which is real milk without the lactose enzyme?? I've had great luck cooking and baking with it.

    I used real cream for this. If you use anything lighter than heavy cream/whipping cream than the milk will most likely curdle from the tomatoes. But, you can add a spoonful of cornstarch to Lactaid or other coffee creams and stir that together before adding it to the tomatoes. (Also adding a dash of baking soda to the tomatoes before adding the lighter cream will help with the ph) Just add it in the end, no need to cook it for 8-10 minutes, just a minute or two if using cornstarch! Oh, and make sure the tomatoes are not boiling when adding in lighter cream, just have it on low heat.
    You wouldn't need to do that for nut/soy/coconut milk though! It shouldn't curdle. :)

    Since Lactaid milk just has lactase added to it (the lactose is not removed) my daughter took a lactase pill before eating it. It's really the exact same thing as drinking lactaid products for lactose intolerance. :)

    Mmmm......this looks really good! My kind of pasta dish. You mentioned how your photo colors are off. It could also be the site. I've noticed when I download photos here they always appear darker, off in color, and occasionally blurry when compared to the original photo.

    Diz, thanks! My photo does look a lot grainier and a bit blurrier than it does on my computer, I never clued in that it's from the transfer here! Makes sense now :)
