Burrladas

    ~Made for January 2020's "Bean and Legume" Recipe Challenge~

    Burrladas Aka Wet Burrito by DIZ3

    I have never made burritos before. I've eaten them, and made enchiladas, but for some reason I don't recall ever making burritos. And this recipe is perfect! I love the combo of burrito's with the enchilada sauce, a perfect marriage!
    DIZ explains things so well and offers the tip of making things in advance so it's easier to roll. So I followed everything she said and made the sauce and filling in advance and chilled it overnight. Thankfully I did, because I'm sure I would have had a mess on my hands if I didn't chill the filling first! Thanks DIZ!! :)
    I made the optional enchilada sauce and it was delicious! I could of eaten that as a soup by itself, Lol...I followed everything in the beef-bean filling except I had a little extra beef (around 1.3lbs), so I upped the spices slightly but kept the stewed tomatoes, refried beans and enchilada sauce the same and it worked out great. The only thing I didn't have was the Anaheim green chili pepper. I've never seen them around here, the only thing I can get are fresh hot chili's like Serrano or jalapeno's and bell peppers. So I decided to use a can of mild green chili's instead. Hopefully that is an ok substitute for the Anaheim's?
    This is such a delicious recipe, we all loved it!! My kids are quite partial to beef taco's but this is a nice change of pace-- and much more filling and satisfying to eat. I can see myself switching up our regular taco nights with these every once in awhile! :)
    Luckily I snagged a quick photo before they were all devoured!

    Oh wow, we love wet burritos! This recipe is different from the one I usually make which calls for stew meat that you cook for hours and then shred. I really think we would enjoy this one as well! Nice picture Shona :)

I've taken these to Cinco De Mayo parties before and have always had people ask for the recipe. Canned green chiles is the correct substitute. Anaheim green chiles are mild. I believe the green chiles sold in the stores are Anaheim or mild unless otherwise label. It's been my experience that New Mexico green chiles are slightly hotter and Hatch green chiles can be smoking hot. I do a lot of Mexican cooking and also grow chile peppers in the garden. I tend to label recipes with the variety so I know which ones to use.

    I'm glad the mild green chili's were a good sub for the Anaheim pepper Diz! Lucky you on being able to grow them! :)
