Butternut Squash Soup

    Made this a couple of weeks ago. I changed a couple of things( dairy issues)
    I used Lactose free milk, for the milk, Silk Milk for Coffee for the light cream.
    I did not use the creme fraiche.
    I used my immersion blender and it worked great.
    I found it very tasty except I had to add more stock as it was quite thick. I added 1 and 1/2 cups extra.
