Butternut Squash Soup.

    Made for the October 2020’s Squash/Cucurbit Challenge.
    Delicious!!
    I followed the recipe and it was wonderful, a quick easy soup. Perfect for a cool fall day.
    I used my immersion blender to smooth it out. The only change I made was to use
    Natrel Lactose Free Whipping Cream in place of heavy cream, and I added scallions
    for color.
    I have more squash in my freezer and will be making this again.
    It is a keeper.

    Enjoy the warmer weather Manella. We got lots of snow yesterday, and it's still snowing. The dogs love it though! ;)

    This is so delicious! I was thinking I should halve the recipe since it's just for myself, but after tasting it I'm so glad I made the full recipe because I get to eat this for lunch for days now :-) I meant to top with green onions like Manella did and forgot, but I will with the leftovers since I know it will be a good addition. Loved it and added my picture to the recipe :)
