Carrot Apple Ginger Muffins

    Carrot Apple Ginger Muffins by Eyecook

    Yum! I am pleasantly surprised by this muffin!
    It's a little more work with all the grating, but definitely worth the effort.
    Carrot muffins are my favorite, and the little zing you get from the fresh ginger is divine! I thought it might be spicy, but it's not--just a gentle warming that goes so well with the cinnamon, carrot and apple.
    I thought the apple flavor would be lost in this recipe, so I added some apple pieces along with the grated apple--just to make sure you could taste it. But it didn't need the apple pieces--the apple flavor does come through with just the grated apple.

    I didn't think my kids would like it, but they gobbled it up and asked for another one. My daughter did pick out the nuts though. And I kinda agree with her on that, it seems like an odd texture with everything else in the muffin. So I'd leave them out next time. Perhaps some dried cranberry or raisins would be a better texture.

    The orange juice and zest is lost in this recipe, and there's already a lot going on in this muffin! So I'll leave it out next time and save on prep time!
    And to make the muffin a little lighter (lighter in texture) I only used 1/2 cup of melted butter and a 1/4 cup of oil instead of the 3/4 cup of melted butter called for.

    One tip: I did use a sucanat type of brown sugar (a whole cane dark brown sugar), which is free flowing. But if you use a regular brown sugar I would add it to the wet ingredients.
    The baking temp. and time was spot on.
    Overall a great muffin, not too sweet and full of flavour! :)

    I would "health" these up next time too! I can see replacing some of the flour with whole wheat or oats. And add some flax meal instead of nuts...Oats go so well with carrot so I'll try that next time! :)
