Carrot Pineapple Muffins

    Carrot Pineapple Muffins by Texalp

    I was looking at Carrot muffins and quick breads for the recipe challenge, and realized I've made quite a few carrot muffins, Lol.... I do love carrot cake and carrot muffins! Pineapple only makes it better, yum! :D
    This is a perfect muffin base for the carrot and pineapple. It's so light and fluffy! I'd love to add more spice though, perhaps some ginger, allspice or clove as I love that in carrot-pineapple cake. And I'd love to make this again with a little coconut added, to make it more tropical.
    I reduced the sugar from 1 cup to 3/4 cup, and baked it for 22 minutes instead of 25. So check on them early. The instructions could be a little clearer for junior baker's. I'm sure most of us here know to fold in the dry ingredients when making quick breads and to not beat or over mix it. ;)
    I sprinkled some turbinado sugar on top for a little crunch before baking. The kids loved them too!

    Nice photo! They look so perfect and uniform, Cosmicmother! I always like dropping in on "I Made II" first thing in the morning with a cup of coffee. So many tempting goodies. I agree, coconut would be good in this. My niece makes a carrot, pineapple, and coconut cupcake and they are wonderful. In fact, this recipe is practically identical to hers except this one uses 1/2c more flour. Probably to give it a muffin texture?

    Michelle, carrot and pineapple are one of my favorite food combo's! You'll have to try it in a cake or muffin form one day!

    Diz, thanks for mentioning your niece's recipe! I was thinking I would have to reduce the flour by some amount to add the coconut. Coconut can dry out baked goods because it sucks up moisture (especially unsweetened/desiccated coconut). Do you know how much coconut she added?

    Cosmicmother--Her recipe calls for 3.5oz (100g) of coconut. She also adds 1/3 c. of pecans and decorates with cream cheese frosting.

    I'm definitely going to add coconut next time. That amount sounds perfect for replacing a 1/2 cup of flour (100 grams of coconut is about 1 cup).
    If you felt up to it one day, you can add your niece's recipe here and I'll for sure make and review it! :)
