Ingredients
  • 1 cup Sugar
  • 2 eggs
  • 1 1/2 c flour
  • 1 c grated carrot
  • 1 tsp baking powder
  • 1 tsp Baking Soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2/3 c oil
  • 1 tsp vanilla
  • 1/2 c drained crushed pineapple
  • (Double recipe & use 1 small can)

Directions
  1. Beat eggs and sugar. Add remaining ingredients
  2. and beat well. Fill muffin cups 3/4 full. Bake at
  3. 350 degrees F or 180 degrees C for 25 minutes
