    Cosmicmother ate it and said...
    So light and fluffy! I used 3/4 cup of sugar and baked it for 22 minutes. Make sure you don't beat all the ingredients, just fold in the dry ingredients.
    Next time I'd like to add a few more spices, and possibly some coconut to make it more tropical. :)
