Cauliflower Breakfast Muffins

    *Made for the April 2020 "Pantry Staples" Recipe Challenge*

    I have to tell you, I was quite surprised at how delicious these were!! I was half expecting them to come out a weird texture or too much cauliflower or something! They were absolutely perfect, even down to the cook time, which mine took exactly 25 minutes to set up. Had some riced cauliflower in the freezer, which I had riced up about a month ago from a cauliflower on its last leg. Didn't have but a little bit of spinach left so I used some kale to make up the difference. I got 15 muffins out of this, but I think I can not be afraid to fill my cups up full next time. I am definitely going to be making these again and try bacon :) Yum!!

    I would have thought the same about the texture, I'm so glad you tried them! Eggs are something we can get here quite easily (meat, not so much!) So, I'm always looking for different egg recipes, bookmarking!! :D

    Thanks everyone! Linda, they do reheat nice! As any eggy type muffin, you should put a napkin underneath to catch the excess water. Still a nice texture thought and tasted great!
