Cauliflower Curry

    Not sure if this is a "Spring" recipe or not...so I'll leave it at not.

    I am always craving curry l, and cauliflower curry is one of my favorites. Sadly I threw away my red curry paste when we moved because it was slightly expired. I did have red curry powder though so I used that along with some garam masala. I think next time I would sub out fresh tomatoes for the canned or even leave them out all together. It really watered down the coconut milk making this not as thick of a sauce as I would have liked. I would also add a sprinkling of cilantro at the end, but that's just my preference :) I ended up getting 4 lunches out of this!

    Thanks Linda! Our store have plenty of fresh veggies, it's just just having to go that's the problem lol. I'm starting to run low though, so I may have to make a store run Friday :/

    This sounds like a regular Thai red curry sauce but with more Indian traditional ingredients like potato, tomato and cauliflower! I bet other veggies like carrot, bell peppers, zucchini etc.would also be great in that sauce. Great tip to use fresh tomato instead of canned, I'm sure it would taste great without the tomato too! :)
