Cheesy Chili Rice

  I was looking for something a little different to go with enchiladas than just the usual Mexican rice. This was perfect! I didn't add enough salt, but that was my fault. A little creamy with a hint of heat from the chilies. It's a keeper :) Another good one left by Pleclare!
