*Made for the 2019 January Casserole Recipe Challenge*

Wow, my family devoured this!! So first of all, I used russet potatoes instead of red potatoes. I didn't want all the russet potato skin in this, so after they baked, I scooped out the insides and threw away the skin. Because of this I weighed out a little more than 2 lbs. of potatoes. I left out he parsley (didn't think my family would care for it in this) and only sprinkled the green onions on top instead of mixing in, so I wouldn't have to search for them to pick them out for my picky little one lol :P Surprisingly, he "thinks" he hates sour cream, but didn't say a word about it while he cleaned his plate :) Cuts out of the pan nicely! Will definitely be making this one again!!

That looks MOST delicious Michelle! It`s pretty much a twice baked potato in casserole form. Infact the ingredients are exactly the same as I use in my twice baked potatoes minus the sour cream. What did you serve it with? This would be a fun thing to bring to a potluck and I can imagine the dish would be emptied pretty quickly!

DIZ, my son is always eating things he thinks he doesn't like, when I can sneak it in there :P

Janet, I served it with chicken fried steak and gravy :) Went SO well!!

My kids won't eat sour cream if it's topped onto a dish or in a taco etc., but they don't complain if it's mixed into something..LOL..;)
